January Bunco- Suzana Chock

First- the food (most important.....duh)

Pistachio Cake

5 eggs beaten
1/2 cup milk
1 stick margarine/butter at room temp.
1 yellow cake mix
2 boxes Pistachio
Instant pudding
1 pkg. (envelope) dream whip
1 cup water

Beat eggs then add remaining ingredients.Mix 4 minutes.Pour in ungreased angel food pan (must use angel food pan)Bake 55-60 minutes in 350 degree oven. (may need up to 70 min.)Turn upside down as you would an angel food cake & cool completely.Remove when cooled completely.

Wintertime-Vegetables Chili

1 medium-sized butternut squash, peeled and cubed
2 medium-sized carrots, peeled and diced
1 medium-sized onion, diced
1-4 Tbsp. chili powder, depending upon how hot you like your chili (I used 2 Tbsp. -I think I would change it to 1 Tbsp. or 1 1/2 Tbsp.)
2 14 oz. cans diced low-sodium (couldn't find low sodium, so I used regular) tomatoes
4 oz. can chopped mild green chilies
1/2 tsp. salt
1 cup fat-free, low-sodium vegetable broth
2 16 oz. cans black beans, drained and rinsed
1/3 cup fat-free sour cream 1.

In slow cooker, layer all ingredients in order given- except sour cream.
2. Cover. Cook on low 6-8 hours, or until vegetables are tender. (I finished cooking this chili on the stove, so it would thicken a little. But, you don't have to.)3. Stir before serving.4. Top individual serving with dollops of sour cream

December- Holly Smith

Holly hosted in December. We had a delicious meal of german pancakes, sausage and fruit. We actually got through 3 rounds this time, which we haven't been able to do lately! It was a great way to end the Bunco 2008 year.

Here's the recipe for this month:

German Pancakes

6 eggs

1 c flour

1/2 c sugar

1 c milk

1 tsp vanilla

1/2 tsp salt

1/4 c butter (melted) + 2 T butter (not melted)

Preheat oven to 400 degrees. Place 9x 13 baking dish in oven. Mix all ingredients except 2 T butter. Remove baking dish from oven and melt 2 T butter in hot dish. Pour the mixture in the pan. Bake until rises and browns, about 20-30 minutes. Serve with maple syrup, powdered sugar and lemon, or berries and whipped cream.

December 2008

We kicked off the last Bunco of the year at Holly Smith's. German pancakes, sausage and fruit were served. It has been a great year of BUNCO and we are sad :( to see some fellow ladies leave but we welcome the new players to the 2009 Rooster. Here's to BUNCO 2009!
