February- Sandi Lyman

I don't know about everyone else but this Bunco was awesome! We actually managed to get through all 3 rounds...see what we can do ladies if we put out minds to it! Sandi was so nice to host this month..even with her huddy coming home to surprise her...really Sandi, we all could have just went and had Bunco outside :) We had a smorgesboard of food, homemade ice cream sammies, chicken satay, pizza bread, veggie platter, shrimp, and the now famous fruit salsa (recipe to follow when received).

January Bunco- Suzana Chock

First- the food (most important.....duh)

Pistachio Cake

5 eggs beaten
1/2 cup milk
1 stick margarine/butter at room temp.
1 yellow cake mix
2 boxes Pistachio
Instant pudding
1 pkg. (envelope) dream whip
1 cup water

Beat eggs then add remaining ingredients.Mix 4 minutes.Pour in ungreased angel food pan (must use angel food pan)Bake 55-60 minutes in 350 degree oven. (may need up to 70 min.)Turn upside down as you would an angel food cake & cool completely.Remove when cooled completely.

Wintertime-Vegetables Chili

1 medium-sized butternut squash, peeled and cubed
2 medium-sized carrots, peeled and diced
1 medium-sized onion, diced
1-4 Tbsp. chili powder, depending upon how hot you like your chili (I used 2 Tbsp. -I think I would change it to 1 Tbsp. or 1 1/2 Tbsp.)
2 14 oz. cans diced low-sodium (couldn't find low sodium, so I used regular) tomatoes
4 oz. can chopped mild green chilies
1/2 tsp. salt
1 cup fat-free, low-sodium vegetable broth
2 16 oz. cans black beans, drained and rinsed
1/3 cup fat-free sour cream 1.

In slow cooker, layer all ingredients in order given- except sour cream.
2. Cover. Cook on low 6-8 hours, or until vegetables are tender. (I finished cooking this chili on the stove, so it would thicken a little. But, you don't have to.)3. Stir before serving.4. Top individual serving with dollops of sour cream
